So now we have the starter... (if not back up and read prior post silly) ;)
(Good thing I have some in the oven while typing this, or you guys would be out of luck as I'm getting hungry for some!)
SOURDOUGH RECIPE: (pretzels, pizza dough, bread sticks):
3/4 cup lukewarm water (I get it hot out of the sink and works fine every time)
1 cup unfed sourdough starter (yes, from above recipe - now go snatch it from your fridge!)
3 cups all-purpose flour (Use same flour as you did your starter)
1/4 cup baker's dry milk (Nothing fancy, you can get it from Wal-Mart- CHEAP)
1 tablespoon butter or olive oil (both worked for us)
1 n 1/2 teaspoons salt (I used sea salt)
2 teaspoons instant yeast (I used same yeast as I did for starter)
2 tablespoons of non-diastatic malt powder or 1 tablespoon sugar (I used 1 tablespoon RAW honey here)
Keep a little flour handy for when you get too sticky...
I give the initial mix with a fork until it thickens, then knead the rest by hand.
(Feel free to use a mixer if you prefer)
Once kneaded well, make into a ball and toss back in the bowl for 45 minutes so it can 'grow'.
BEEP, "Timer!!!" My kids happily yell.
(forgetting EVERY time it actually hasn't cooked yet!!) LOL
Now out of the bowl onto the counter...I use a plastic mat to contain the mess.
Flatten it out, you may need a touch of flour here if still too sticky, just lightly dust it if needed.
I took a pix so you could see about how thick/thin I did it.
I use a pizza cutter to cut it into sections because well, it's just easier and faster that way.
And really, who does't like easier?
As you move sections to your lightly greased pan (hint hint) hand them to let them stretch a bit.
(or at this point you would roll into long ropes for pretzels)
At this point do what you will ~~ here is what we did.
Brushed them lightly with olive oil.
Brushed them lightly with garlic juice (yes really)
Then sprinkle with salt. In our case garlic salt ((in case you missed it, we like garlic!!)
In the oven at 350 degrees F for 20 - 25 mins.
You can go a tad longer, but we like them best around 20 minutes.
This is the time when you start smelling that AWESOME smell and can use this chance to get your
kids (and husband) to do just about anything you want them too!!! ha ha ha
Remove and we brush lightly with butter.
You can put more salt on here if you like more salt or didn't get enough the first round.
THEN you can fight your family for one before they're all gone!!
